We have been increasingly asked about options other than red meat at weddings, as many more people are eating less meat (red in particular) for many reasons. Our personal consumption of meat has reduced significantly. Vegetarian meals have become the norm rather than the exception and processed meats are rarely in the fridge.
We have experimented a lot over the winter with smoked beer can chicken. We have always cooked lots of Ottolenghi chicken dishes which are fantastic but do not necessarily have the visual appeal. I have tried several different ways of cooking beer can chicken ( not using beer cans with potentially poisonous aluminium oxides and paint fumes ) and the results have been really good: slow cooked moist chickens with the juices being captured and recycled as steam, through the cooking process. We are offering this at several weddings this year along side other joints of meat.
