Another large wedding of around 150 guests. The couple were young talented musicians who did want any red meat on thier day. They lived near and ate regularly at Morritos in London. Having been to Morros a few times we needed to visit Morritos as the clients loved their mezze. I got the Morritos book and worked their favourite ingredients into a Morritos style wedding menu. Croquetta not dissimilar from Dutch Bitterballen I had made before. Home made falafel Beetroot boriani and a ceviche cavelo nero salad loosely based on an Ottolenghi spring salad were really fresh and lovely. Each table had a selection of salads and whole beer can chickens which had been mariated in dates olives herbs and wine and then cooked slowly smoked over cherry wood and charcoal on our BBQs. Lots of live music all day. Followed by vegetarian pizzas in the evening and a large amount of cheese kept all the guests well fed. A long but lovely day.
