Ex professional chef now living in Australia with some very precise ideas that I could learn from wanted a very relaxed wedding day based around lots of eating and not too much drinking. One of the early inspirations for us to research beer can chicken. They were Staying over for the weekend at a venue sleeping 50 with 30 more coming during the day so I supplied Dingley Dell black treacle streaky bacon, lovely fresh rolls from the Friendly loaf in Nowton and lots of free range eggs for their breakfast I cooked 50 best bakers for their lunch accompanied by an English tomato salad they supplied Tuna and cheese
Then on to Afternoon tea made on site warm scones with Roddys clotted cream homemade, Damson Jam from our own tree, cream cheese and cucumber sandwiches, cheese and the last of the green bean chutney sandwiches
Canapes: I made a huge dish of potted shrimps served on warm melba toast
Home smoked trout on fresh blinis
Yotams char grilled broccoli with almonds and chilli adapted for a cocktail stick

Home made Harissa BBQ beer can chickens
BBQ Butterflied legs of English lamb marinated in Thyme and Lemon
Salsa Verde
Giant cous cous Feta parsley and finely chopped preserved lemon
Anya’s warm dressed
Feta red onion olives marjoram and thyme salad
Shredded beetroot parsnip and Carrot salad with cumin and sherry vinegar
Dessert
Mini meringues with rose water with unsweetened cream and along with local strawberriesand pouring cream

lots of food going on spread out during the day for a really relaxed feel to a celebration that was like the family party they wanted and without any wedding formality that they didnt
